Easy chakalaka

This is a go-to dish in South Africa. Your chakalaka is essential to every Sunday brunch or dinner. You can make it as spicy or as hot or mild as you like. It’s all up to you and the path you want to take. Here’s an easy chakalaka recipe to follow.

Serves up to four people, but you can adjust it to make the recipe smaller.

 

INGREDIENTS

  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 3 chilies, finely chopped
  • 2 teaspoons of crushed garlic
  • ¼ cup of vegetable oil
  • 5 carrots, grated
  • 2 tbsp curry powder (mild and spicy)
  • 3 tomatoes (sliced)
  • 400g of canned beans
  • Add salt for taste

 

METHOD

Heat the oil in a large saucepan over medium heat.

Add the onion and cook for a minute or two.

Stir in all of the spices: garlic, ginger, smoked paprika, curry, cayenne pepper, and thyme; continue stirring for about a minute to allow the flavors to bloom.

Toss in the tomatoes, bell peppers, carrots, and cabbage.

Cook for 5 minutes, occasionally stirring to avoid burns.

Add the baked beans and bouillon powder, and mix thoroughly. ” Cook for an additional 2 to 3 minutes.

Adjust seasonings to your liking. Serve it hot.
