Sticky beef stir-fry with sprouts is the perfect weekday dinner. Quick and easy, it’s bursting with flavour and very satisfying. As with many Asian-inspired dishes, the secret is in the seasoning. 

Sticky beef stir-fry with sprouts

Serves: 4
Cooking Time: 40 mins

Ingredients

  • 30ml (2 tbsp) olive oil
  • 1kg beef strips
  • 2 seeded and chopped red peppers
  • 5 chopped spring onions
  • 2 large chopped bok choi
  • 250g sprouts
  • 15ml (1 tbsp) sesame oil
  • 50ml soy sauce
  • 50g sugar
  • 30ml (2 tbsp) finely chopped fresh ginger
  • a handful of freshly chopped coriander
  • salt, to taste
  • rice, to serve

Instructions

Heat olive oil in a large pan. Add beef strips and lightly brown on all sides. Add seeded and chopped red peppers and fry until lightly coloured, about 3 minutes. Add chopped spring onions and cook for 2 minutes.

Add large chopped bok choi, sprouts, sesame oil, soy sauce, sugar, finely chopped fresh ginger, a handful of freshly chopped coriander and salt to taste. Quickly stir through on high heat, adjust seasoning and serve immediately. Serve with rice while still hot.

Notes

To drink: Groote Post Merlot makes perfect use of a royal grape with savoury, plummy flavours.
